A series of 3 cork-and-caged barrel-aged beers that were aged in used red wine barrels from the Okanagan that previously held reds that became a Bordeaux-style blend.

Sour Saison: Light -- A blended sour saison based upon our Saison Lacombe: Lumiere.
Sour Saison: Dark -- A blended sour saison based upon our Saison Lacombe: Noir.

A series of 3 barrel aged imperial stouts based on our Ichorous Imperial Stout. Each run of barrels comes from a different source and each produces different flavours based on the type of barrel as well as the previous liquid in them. They are differentiated based on the colour of the label.

2000 Ch. Pontet-Canet (Pauillac, Bordeaux) - I drank this fabulous 2000 Pontet-Canet in Hong Kong last summer at home with family. It was a wonderfully complex wine that was really starting to show its best. On the nose it displayed tar and currants with hints of dried fruits and berries. The Lambics of the Cantillon Brewery are called "young" after one year of aging and reach their full maturity after three years. Young beers contain the natural sugars required for the second fermentation in the bottle. The three-year-old beers bring their bouquet and finesse.

The Gueuze is the result of a complex mixture of Lambics of different tastes and ages, preserved in oak barrels. The most important role of the brewer is taste. He will have to taste a dozen Lambics from different barrels to finally select five or six. This is how the Gueuze 100% Lambic is made, bearing the original character of the beers of the Cantillon Brewery. Each assembly tank will give birth to a different Gueuze. The natural elements we have do not allow us to manufacture a "standard" product.

Arranged horizontally in the cellar, the bottles will remain on average one year to allow the transformation of sugars into carbon dioxide (second fermentation in bottles). The saturation of the beer is slow and naturally. When Lambic becomes sparkling, it is called Gueuze.

2011 Dal Forno Romano Valpolicella Superiore Monte Lodoletta (Veneto, Italy) - The 2011 Valpolicella Superiore Monte Lodoletta is a darkly concentrated but carefully balanced expression that only the most expert vintner can pull off with success. Consider that the dry extract is a massive 48 grams per liter. In fact, there is some minor precipitation of color matter even at this relatively young age. This wine was aged in new oak for two years (instead of the standard three years) with four years bottle (instead of three). That extra year in glass served to help the wine integrate and to reduce micro-oxygenation. The bouquet is bright and fragrant with floral notes of rose and violet that are rare to find in Valpolicella. There are faint tertiary notes as well that add to the complexity. You will find cured leather and savory spice. The finish offers enough acidity to refresh the palate, following that considerable density and thickness.
